Smoked Salmon and Cucumber Sandwiches
Combine cream cheese, lemon juice and capers in a bowl, season to taste with salt and pepper. Spread bread with the cream cheese mixture, then place salmon slices over half the bread slices, scatter with some dill sprigs, then arrange cucumber slices over the salmon. Cover with remaining bread slices and, using a serrated knife, trim the crusts and cut each sandwich into three fingers.

250GM cream cheese at room temperature
1 tbsp lemon juice
1 tbsp salted capersrinsed, drained and finely chopped Sea salt
freshly ground black pepper
16 slices of wholemeal bread 200GM packet smoked salmon
3 Lebanese cucumbersthinly sliced (using a vegetable peeler) 1 bunch of dill
